Crock-pot Dinner and Repeat March 24, 2011

Apparently, I eat very little else besides corned beef. At least, that is what is seems like from looking through past entries!

In celebration of my family’s arrival, we made an easy dinner in the crock-pot.  I love how supper can be simmering away, bubbling in happy patience  waiting for our family to arrive home. Few things make me happier than to have everything ready after a long day. As I’ve mentioned, delicious left overs also are on that happy list.

I give you: the reuben.

Melty (horseradish) cheese, sauerkraut, thousand island dressing, and of course corned beef all nestled deliciously between two pieces of marbled rye.

Combined with several rounds of pitch and balderdash, we certainly had the makings of a great day!

They finally made their way from Central New York on a four-day trek to Colorado. Hooray! It’s so nice to finally have them on our new stomping ground.

We decided to take them to Eldora for some skiing/snowshoeing. Lucky them, welcome to Colorado… let’s put your tolerance of altitude to the test.

Mum, Dad and I went for a snowshoeing jaunt. Chris and Tim shredded some gnarly pow, or something like that. The weather was as good as can be expected for Eldora. A little windy on the mountain, but really nice in the trees for a hike.

For dinner we carbed it up with mounds of linguine and garlic bread. Scrumptious!!! Gosh I love me some pasta!

My Upstate New York roots must have come out in full force when my family arrived. All I wanted was some good old-fashioned Italian food!

Have you ever had a craving for food that seems to never go away until you’ve had a taste of it?

That was me and guacamole today.

All I could think of was getting some of the green deliciousness. I wanted fresh tomatoes. I wanted spicy garlic. I wanted savor lemon juice. I really wanted creamy avocados.

Finally… when their powers combined, they became Captain Guacamole!!! Gosh it was just what my taste buds wanted.

Bicycle, Bicycle, I Want to Ride My Bicycle! March 21, 2011

Yesterday, my mother-in-law decided to get bicycles for me and my hubby.

Isn’t she a beaut? It’s a comfort bike, which means that the handles are back farther so the rider can sit up straight. The seat has shocks so the ride is nice and smooth. All it needs is a bell and basket to make it perfect!

Chris and I went for a long ride down to Pearl Street at the center of Boulder. Truly delightful, but my backside feels it today!

For dinner we decided to take advantage of the sunny weather and utilize the grill. Boca burgers and hot diggity dogs!

I keep thinking that summer is here, but then remember that it only just became spring!

As I’ve mentioned, corned beef makes me happy. What makes me just as happy is the leftovers you can make with the delicious stuff.

Corned beef hash!!!! Rubens!!!!  How much better can it get? Two scrumptious meals in one week!

Today I decided on hash. All the ingredients are on hand, which was the deciding factor.

 

It was delicious! I don’t usually put the cabbage and carrots into the hash, but it worked out nicely.  A nice blob of ketchup on the side, and I was almost dancing it was so good!
