A Very Royal Wedding April 29, 2011

It was well worth the wait and staying away for 22 hours straight! Of course I am talking about the royal wedding of Prince William and Kate Middleton. The coverage started at 1am my time and was still going strong when I went to bed at 6am.

Now, however you feel about the royals, I decided that I wanted to watch the wedding as it really is history in the making. So many people can tell you where they were when Charles and Diana got married, and I’m sure this wedding will have a similar effect.

Kate’s dress was absolutely stunning. I think that she struck the perfect balance between classic and modern that everyone hoped she would. She certainly looked the part of a princess, modest and lovely without being over the top. I love that she wore Queen Elizabeth’s tiara, and that she had the train that you hoped she might, and that the top of the dress had the air of Grace Kelly about it. Simply put, just what you want a princess to look like.

I love the pomp and circumstance that surrounds weddings as it is, but a Royal Wedding manages to contain so much history and tradition that it makes everything all the more exciting! The cars, the carriages, the crowds… what a happy day was had by all involved.

Coming from New York I am often disappointed by pizza just about anywhere else.

I love the thin crust and the perfect cheese to sauce ratio of New York style. No other pizzas compare.

Every once in a while though a good pizza will come along and dazzle my taste buds.

They have so many specialty pizzas that I would love to try. Mediterranean, chicken sausage, Provence, Thai, Mexican… they all sound delicious!

Strawberries were on sale,  but you had to buy two cartons. Fruit is really hard for me to resist… especially when it is on sale! Those red berries looked so juicy and nice. Definitely called my name!

So tonight, I was trying to figure out how to use my strawberries.

Then it came to me: Strawberry Shortcake!

A little bit of angel food cake, a bunch of my strawberries, a squirt of whipped cream and a drizzle of chocolate syrup. Just what I needed after a long Tuesday.

I’m Getting Better! April 25, 2011

It has now been over a week of coughing, wheezing, sniffling and the like. This was not amusing at the beginning, and I am certainly not amused by this illness now. All I want is for my lungs to be in working order. Is that too much to ask???

On the plus side, after my week of ickyness, I finally have gotten to the point where I want to eat more than soup!

I decided to go for a reprise of my Mexican pizza.

Easy, fast, my kind of recipe. Saute a pepper. Add in black beans. Add in salsa of your choice… I picked a medium red salsa for tonight. Put on a tostada and sprinkle with cheese. The perfect simple dinner!

All American, All Around April 21, 2011

It’s movie night, so Ruth, Lindsay, Chris and I chose an All-American theme for tonight’s dinner and a movie: Macaroni and Cheese, Apple Crisp and American Beauty.

Dinner was delicious, if I do say so myself. Macaroni and cheese is one of those great dishes that can be made ahead of time. It is always great to take a bit of time the night before in order to get dinner on the table at a reasonable hour. Now, I can’t give away the recipe as it’s my Mum’s secret, but I will say that when you’re making it be sure to use sharp cheddar cheese to make sure it’s a nice cheesy flavor. We had good amounts of green on the side… broccoli and asparagus. Just to balance the cheesy goodness.

For dessert, Lindsay found a recipe for healthy apple crisp.

The Recipe:

  • 6 Macintosh Apples
  • 1/2 tsp cinnamon
  • 1/4 cup rolled oats
  • 1/3 cup light brown sugar
  • 1/4 cup all purpose flour
  • 1/4 tsp nutmeg
  • 1 1/2 tbsp promise light

Directions: Preheat the oven to 375*F. Spray an 8×8 baking pan with a non-stick cooking spray. Slice and core the apples, then layer the apples in the baking pan. Add all of the remaining ingredients in a mixing bowl and crumble over the apples. Bake for 30 minutes, or until the apples are tender.

It was certainly tasty, but a little drier than crisps usually are. We tried adding in a bit of water in the middle, but that didn’t seem to do much. However, dry or not, add a bit of vanilla ice cream and it turns to something outstanding.

For our film portion, we watched American Beauty.

As you can see, it did well at the Academy Awards in 1999. I’ve spent quite a while thinking about why it was such a big hit. Really, it was a sad look at American family life and the frustrations that can tear people apart. A lot of the film seemed to be revolving around the idea that everyone in suburbia is hiding something in order to keep up appearances.

Basically, I came out of the film thanking my lucky stars that my life doesn’t resemble the lives of those characters. The husband and wife who can’t stand each other, but are staying married because they look like a perfect couple and like that image. The military father who is willing to beat his son for any imagined infraction, only to discover it’s because he can’t stand himself.

All in all, I’m not sure that it was a great picture of what American suburbia life is like. If that was its goal, I hope that it misrepresented most people’s lives!
