Scotland in my Soul January 28, 2012

Today was a delightfully quiet, cozy kind of a day. The sky was grey, and for those of you not living in Colorado, please understand this is a rarity. Don’t get me wrong, I enjoy the sun, it makes playing outside easy when you know you can count on the weather. Sometimes, my soul craves grey days. It must be the east-coaster in me.

So today was one of those days that revives me. A little overcast. A little grey. Mostly perfect. On these kind of days all I want to do is read, sip some tea, and dream of Scotland.

For those of you who don’t know, I spent my junior year in college in Edinburgh, Scotland. Certainly some of my favorite memories took place there. Chris proposed while I lived there, my family visited for Christmas which involved fire-light parades, I made some wonderful friends who enjoyed a good frolic through moors, on top of hills, in glens and in the sea. I have come to the realization that I left a little bit of my soul there. On grey days, I close my eyes, imagine the salty sea air brushing against my face, hair whipping in the wind and Scotland running through my veins.

As a poor substitute for being in my dream-land, I made one of my favorite meals: Tuna fish on a baked potato.

In Edinburgh, there were lots of bake potato shops, where you could get a myriad of toppings on a steaming hot baked potato. I loved being able to get an extremely filling meal, that wasn’t deep fried, for relatively little money. The tuna salad topping was my favorite. Absolutely delish.

To complement my meal, I simply had to add a side of black tea with a splash of milk. And of course, a Tunnock’s Tea Cake for desert.

If you have never had a tea cake, I would advise you to go and find one now. It’s a bit like a s’more. Marshmallow filling on a biscuit covered in chocolate. Besides, it’s like unwrapping a present every time you eat one… and who doesn’t like getting presents??

For now, tuna baked potato with tea and cakes will have to do to satisfy my urge to go to Scotland. Just for now.

Soup Week January 8, 2012

This week has been filled with soup. The past two weeks had been filled with delicious goodies and tasty treats. I certainly enjoyed myself on Christmas with Chris’s family with a fantastic meal of lamb chops. Then we went for a week with my parents, who fed us heartily the whole time.

After all the fun, I felt a bit weighted down and decided to make two pots of soup to eat for the week. I made Caldo Verde and Turkey Cabbage Soup, both were delicious. However this did make for a rather dull week in food. One soup for lunch, the other for dinner. I love making soups. They are incredibly easy, very satisfying in the winter, and last for quite a while.

For the first soup, Caldo Verde:

Ingredients:

  • Cooking spray
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 8 oz uncooked turkey sausage, cut into 1/2 inch thick rounds
  • 4 cups canned chicken broth
  • 4 cups kale, stemmed and shredded
  • 1 medium potato, peeled
  • 1/2 tsp table salt
  • 1/2 tsp black pepper
  • 1/8 tsp hot pepper sauce, or to taste

Instructions:

  • Spray a large saucepan with nonstick spray; set over medium heat. Add the onion; cook, stirring often, until softened, about 5 minutes. Add the garlic and cook for 20 seconds.
  • Add the sausage; cook, stirring often, until browned, about 5 minutes.
  • Pour in the broth; bring to a simmer, stirring often.
  • Using the small holes of a box grater, grate the potato into the stew. Stir well while returning to a simmer. Cover, reduce the heat to low, and simmer for 5 minutes, stirring a couple of times.
  • Stir in the kale; cover and continue cooking, stirring occasionally, until the kale is tender, about 12 minutes. Stir in the salt, pepper, and hot red pepper sauce before serving. Yields about 1 1/2 cups per serving.

Well, mine should be called: Caldo Morado. I used purple flowering kale rather than the traditional green. It made for an odd looking, but tasty soup!

For the second soup, Turkey Cabbage:

Ingredients:

  • 1 lb ground turkey
  • 1 large onion, chopped
  • 46 oz V8, or tomato juice
  • 1 1/4 lb cabbage, cored and chopped
  • 3 large carrots, peeled and chopped
  • 3 ribs celery, chopped
  • 1 bouillon cube (optional)
  • salt and pepper to taste
  • water, if needed

Instructions:

  • Brown meat with onion, breaking up meat into small bits. Drain fat and transfer into a saucepan.
  • Add tomato juice, cabbage, carrots, celery, bouillon, salt and pepper.
  • Bring to a boil, reduce heat, cover and simmer for 1 1/2 hours. If the soup gets too thick, add a little water.

It’s a really delicious, hearty soup that is nice on the first day, and even better on the second (or third) night. I certainly feel lighter of foot now that I’ve eaten my veggies in soup form for the last few days. I am ready for a wider variety of food for the coming week!

As for activities this week, Chris and I went to a contra dance in Fort Collins yesterday. It was so much fun! I love contra dancing, as there is lots of spinning and flying around the dance floor. It was made even more fun because we knew one of the members of the band! Definitely a night to remember!

Ringing in the New Year January 3, 2012

2011 was a pretty good year for Chris and I. Ski vacation at Keystone, an anniversary trip to the Dakotas, a wedding in the Finger Lakes and visits with family in Central New York. Chris was made ‘credit card ambassador’ for his district. I finish my second (and final) year of AmeriCorps. Shortly after, I was lucky enough to find a job at Fairview High School. We brought home a puppy, and have been running around ever since. We have been lucky enough to have jobs that support us, family around us, and lives that keep us healthy and active.

At this time of year there is the delightful tradition to make resolution for the new year. I like to take the time to reflect upon the past year to think of how to improve in the new year. So here are my resolutions for 2012:

1. Restart my blog. Last year, my blog started out with a bang. It helped me to cook creative, healthy meals. The blog helps me to stay on track and gives me a creative writing outlet, which I love. After a certain puppy ( who shall remain nameless) came into out lives, the blog fell to the wayside. It’s time to put aside the excuses and start back up with the writing!

2. Keep up with Weight Watchers. I’ve had decent success this past year, and want to make sure 2012 is even better. There were a few corporate shake-ups that have left me without my favorite leader. I need to make sure I don’t let this get in my way, and continue on.

3. Create an Etsy site. I love crafts. Love them. Unfortunately, I don’t have space to keep all my finished products. The result? Set up an Etsy site to take care of the overflow of crafts and make some money on the side!

These seem like doable to me, and hopefully they will help 2012 become a great year. We’ve got some great things planned… A trip to Ireland with Chris and my brother, going back to school for me! Definitely should be a great one!

We have had a very productive weekend. Yesterday, Jolly and I had a baking party! Unfortunately I forgot my camera, but I assure you, there were lots of delicious treats. Jolly ended up making peanut butter oreo cheesecakes. They were definitely decadent treats! I made pumpkin spice cookies, which were cakey and moist… delish!

Ingredients:

  • 1 1/3 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 3/4 cup canned pumpkin puree (plain)
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/4 cup canola oil
  • 1/4 cup dark molasses
  • 1 cup golden raisins

Directions:

  1. Preheat oven to 350*.
  2. Mix flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, and nutmeg in a large bowl.
  3. Mix pumpkin, brown sugar, eggs, oil, and molasses in a separate bowl until combined.
  4. Stir the wet ingredients and raisins into the dry ingredients, making sure that none of the dry ingredients remain.
  5. Drop tablespoons of batter onto a cookie sheet 1.5 inches apart.
  6. Bake the cookies until they are firm to the touch and lightly golden on the top, about 10-12 minutes. Place them on a wire rack and let cool.

I’m going to bring these to work tomorrow, and I bet they’ll go fast!

After a long day of cleaning, shredding, and vacuuming, Chris and I decided to cook up the filet mignons that my grandmother sent to us. Let me tell you, we were excited to see these lovelies in the mail!

Chris put a little bit of Worcestershire sauce and stir fry sauce  on the filet, and grilled them to perfection. Really, he can cook a mean steak.

Add a dollop of cheddar mashed potatoes and a side of green beans, and you’ve got yourself a dinner!

Make New Friends, But Keep the Old September 16, 2011

My dear friend, Lindsay, finally managed to escape the clutches of Gross Anatomy to visit Boulder for a dinner and a movie night! We decided to go with an end of summer theme for dinner… think turkey burgers, corn on the cob, sweet potato fries, and a side salad.

Lindsay whipped up some magic spices into the ground turkey, so I’m not actually sure what ended up into the patties. All I am confident of is that there were onions and… wait for it… brie. That’s right, brie. Let me tell you, these beauties were FANTASTIC.

Chris grilled them to perfection. Just the right amount of char. Mmmm, my mouth is watering just thinking about them!

I kept myself busy by shucking  corn and chopping veggies. We even added in some of my home grown tomatoes- they are the teeny, tiny ones in the picture.

We ended up watching Ocean’s 11… definitely an oldie, but goodie. How can you not love a cast that includes George Clooney, Brad Pitt, Matt Damon and Julia Robert? Definitely a great way to spend a great evening with a great friend!
