In Need of a Little Green July 18, 2011

As we are approaching the end of my second year of AmeriCorps service, stress levels are a little more elevated that usual. I am not one who likes goodbyes. I don’t love change. Obviously, this is strange coming from someone who has lived in five different cities in the last five years.  This year, it’s almost worse. I won’t be the one moving, so I’ll stay in one place while everyone else moves around me. Oh well, I’m sure everything will turn out well in the end.

In order to combat the stress levels, I decided on a salad. There is something about salad that calms me down. It must be all the vitamins!

Although it might not look it, this, quite possibly, might be the most delicious salad ever! It combines so many wonderful elements: carrots, cucumbers, radishes, kalamata olives, avocados, black beans couscous and chicken.

I love having lots of veggies in a salad, but the warm couscous put it to a whole new level! Definitely a wonderful addition to any salad, and most welcome on my plate. The best part is being able to use up leftovers… definitely a must in my house!

Snow in Spring? This Calls for Stew! April 13, 2011

Really, Colorado? Snow?? In April???

Fine. Keep faffing about with the weather. I’ll go make a stew.

A delicious lamb stew at that. Combined with a hunk of nice, crusty sourdough bread there is nothing that combat cold weather better.

The Recipe:

1/2 lb lamb stew meat

1/2 cup baby carrots

1/4 cup peas

1 stalk of celery

1 onion, chopped

1 tbsp paprika

1/4 tsp dried thyme

3 cups beef stock

3 small potatoes

Put the carrots, onion, celery, lamb, thyme, paprika and beef stock into a crock pot. Put on high heat for 5 hours. When you are almost ready to eat the stew boil the potatoes and mash when they are ready. We thickened the broth a bit by taking some out and adding in corn starch. I like a little heartiness to my stew. At the very last minute, I added in my peas from yesterday’s dinner. What a great addition of color, texture and flavor. Mmm.

This was my easy take on Shepard’s Pie. No baking involved, but they flavors are all still there. As an added bonus, you can stick as many veggies as you like into a stew like this. I’ve made root vegetable shepard’s pies before, so squash or rutabagas would be a nice addition.

Lindsay and I had our second dinner and a movie night. What a great way to start off the week! Delicious food, wonderful movie and amazing company!!!

Tonight, we had a ticket to exotic Morocco and enjoyed Spicy Moroccan Chickpeas whilst feasting our eyes on Casablanca. Bogart, Bergman and garbanzo beans… how can you top that?!!

The Recipe, courtesy of Cooking Light:

Ingredients:

  • 1/4 cup extra-virgin olive oil
  • 3 large garlic cloves, peeled
  • 2 cups thinly sliced red onion
  • 1/2 cup dried apricots, sliced
  • 1 tablespoon ras el hanout (Moroccan spice blend) or garam masala
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper
  • 1 (3-inch) cinnamon stick
  • 1/2 cup water
  • 1 1/2 teaspoons grated lemon rind
  • 1 1/2 tablespoons fresh lemon juice
  • 2 (15-ounce) cans chickpeas (garbanzo beans), rinsed and drained
  • 1 (28-ounce) can no-salt-added whole tomatoes, undrained and chopped
  • 6 cups escarole, torn into 1-inch pieces
  • 1 cup cilantro leaves
  • 1/4 cup mint leaves
  • 1/2 cup roasted whole almonds, coarsely chopped
  • 4 cups hot cooked couscous

1. Heat a large skillet over medium-high heat. Add oil to pan; swirl to coat. Add garlic; cook for 1 minute, stirring constantly. Remove garlic from pan using a slotted spoon; discard or reserve for another use. Add onion and next 6 ingredients (through cinnamon stick) to pan; sauté for 7 minutes or until the onion is lightly browned, stirring occasionally. Add 1/2 cup water, rind, juice, chickpeas, and tomatoes; bring to a boil. Reduce heat, and simmer for 7 minutes, stirring occasionally.

2. Stir in escarole; simmer for 1 minute or until escarole wilts. Remove from heat. Sprinkle with cilantro and mint; top with almonds. Serve over couscous.

It didn’t take too long, it makes enough for a small army, the ingredients are so flavorful and bold, what a great recipe.  The addition of the mint, cilantro and almonds to the top brings all of the flavors together beautifully. I am a fan of bold flavors all being brought together in one dish. So much fun for the tastebuds!

As for the movie, well, it’s Casablanca. Humphrey Bogart is smouldering as always and Ingrid Bergman shimmers as a goddess of the silver screen.

 

Now, I’ve watched the film several times previously and each time I get something different out of it. This was the first time that I managed to wrap my head around the historical context and move into the dialogue. What I had never really managed to pick up on before it how witty and humorous the script really is! The film made me laugh in several parts, my heartstrings were tugged at, the music made me long to live in a different time period. All in all, just what you want from a great movie.

Mangos are Messy April 6, 2011

There are few fruits that are more delicious than a mango.

I love the smooth soft texture! I love the smell! I love the color!

But why, oh, why must they be so messy???

Look at it… doesn’t it seem so innocent? Perfectly contained, the skin is smooth and unassuming. Hiding the copious amounts of juice and fibrous pip. How cheeky. How dastardly. How unkind.

Mango, all I want is to get at your fruity deliciousness. Why must you thwart me? Why must I always end up with sticky fingers and juice everywhere?

Next time, please play nicely!!!

Rocks and Dinos March 27, 2011

There are many benefits of family coming to visit. At the top of my list is finally getting to spend time with them, but in a close second is having a good reason to visit many area attractions!

Going to the zoo is always good in my book! You even get to feed some cute lorikeets!

Next I took them to the Red Rocks Amphitheater. I had never been there, and was completely blown away by the amazing depth and range of colors in the rocks. It is truly a natural wonder.

I really want to go to a concert here. The acoustics are supposed to be phenomenal, and being surrounded by the rocks would be such a unique setting.

Right across the street is another geological wonder: Dinosaur Ridge.  In one fascinating outcrop there is layer upon layer of ancient history being told. From inland seas to mangrove swamps and a dinosaur highway that stretches from New Mexico to Wyoming. Very cool stuff to be seen!

The remains of an inland sea. Can’t you just hear the water lapping at the ancient shores? With rocks like these, it doesn’t take much to imagine!

Why yes, that is an ornithomimus footprint behind us.  Good old dinosaur highway… overlooking a modern highway. We have come full circle!
