Evidence Was Destroyed March 9, 2011

So, tonight I had some delicious nachos with cheddar, leftover chicken, jalapenos, and olives. They were really yummy- although probably not all that healthy.

But the evidence was destroyed!

I was starving when I got home. Lunch seemed to be hours ago. Snack didn’t tie me over. It was the kind of hunger that leaves you a little shaky and nothing seems to help! Not a good feeling at all.

So sadly, when I got home all I could think about was food…NOW!

I dislike that feeling of complete urgency because it seems to wipe all other thoughts out of my head. Apparently this includes the thought of taking pictures of my dinner. Unfortunately this means that it went undocumented.

I did however have a delicious side salad of spinach, feta, carrots, dried cranberries and coconut. Mmmm, sometimes greenery just hits the spot!

Now I’m off to the YMCA again. Second night in a row! Some elliptical, stair stepping, strength training and stretching is in order! It makes it so much easier to go when you have a great work out partner!!!

Cilantro is Addictive March 4, 2011

After a day long meeting, all I wanted to do was go the Y.

So, I did… with two fantastic gym buddies I might add! Some elliptical, stair stepper, and weights later, I felt so much better! Nothing combats the ‘sitting-in-a-meeting-itchiness’ better than raising your heart rate and feeling muscles you had forgotten that you have. Delightful.

When I got home, it was just about dinner time.

I had cilantro.

I had shrimp.

I had asparagus.

And, I had an idea… a delicious idea.

Shrimp and Asparagus Spaghetti with Cilantro Pesto. Fantastic.

The Recipe:

  1. Cilantro Pesto:
  • 1 bunch of cilantro
  • 3 cloves of garlic
  • 1/3 cup of olive oil
  • 1/2  tsp salt (or less to taste)
  • 1/2 tsp pepper
  • 1/4 cup walnuts
  • Mix all of the ingredients in a food processor until smooth. Easy peasy.

2. 8 shrimp

3. 1 cup of asparagus broken into 1″ pieces

4. Whole Grain Spaghetti

Make the cilantro pesto. As you are making it, cook the pasta. Steam the asparagus. I used frozen shrimp, so I boiled them for 3 minutes. When everything is ready, toss them in a bowl and coat with the pesto.

Anything with cilantro is good in my book. Something about the smell makes me drool. And the fresh taste that you get, like fireworks on your taste buds.  Mmmmmm. Delightful!

As a complete and random side note… I was watching Top Gear this evening (greatest show ever) and Boris Becker was the Star in a Reasonably Priced Car. Becker was my all-time favorite tennis player. Known for his full out dives, youngest player ever to win Wimbledon and one of the many reasons why I wanted to play tennis in the first place. Definitely made my night.

Really, what is there not to love???

As part of my new and improved exercise plan I have decided to add in some more strength training components. The hubby bought a Gold’s Gym Slant Bench which has an adjustable back and resistance levels which can be set to the desired level.

Not particularly the most complicated piece of equipment, but it allows me to work out my upper body and to attempt crunches. I’ve decided that strength training is an important aspect of my routine as well as yoga, walking, snowy outdoor activities, and eventually gym time.

My goal for the weekend is to plan out meals for the week. I think that this will counteract my typical behavior of standing in front of the fridge desperately hungry and trying to rack my brain for something to create from the meager foods left at the end of the week.

Weight Watchers has a cool system where you can type in a few foods that are in your fridge and they give you recipe suggestions. We’ll have to see what they come up with for pasta, cilantro, peppers, lettuce, ground beef, and chicken!

Besides, I have to be super healthy tomorrow… the day before the dreaded weigh in!
