It’s Monday. Work had a few too many lulls for my liking, so I had plenty of time to think about dinner. I wanted something light and delicious, so decided on chicken piccata… always a good choice!

This meal combines everything that I love. Broccoli, mashed potatoes, lemon, capers and artichokes… especially the artichokes.

It’s an easy enough meal to make. Just needs a little preparation.

For the piccata for two:

  • 1 chicken breast halved
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 3/4 cup chicken stock
  • 1/2 cup white wine
  • juice of one lemon
  • 1 can quartered artichokes
  • 2 tsp capers

1. Dust the chicken with flour until evenly coated.  2. Cook the chicken in the olive oil until done. 3. Once the chicken is cooked, add in the stock, wine, lemon juice, capers and artichokes. 4. Let simmer for 15 minutes. 5. Enjoy!!!

 

Toppings Make Everything Taste Better August 20, 2011

One of the things that I miss most about college is the cafeteria. This is probably not the case for most people… I’ve heard horror stories about  “dorm food”. Schools that only offer fast food choices, your typical pizza and chicken tenders fare.

This was not the case at Dickinson College. I loved the cafeteria! There were so many choices every night:

Two hot meals

One vegan hot meal

A meal from the grill

Two soups

And my favorite: the salad bar

Salad at home is always a bore to make. In my salads, I like to have lots of different toppings, but I dislike cleaning and chopping all the veggies. I want cucumbers, peppers, carrots, celery, peas, olives, artichokes, beets, cheese, couscous, pasta, tuna, etc., but I don’t want anything to go to waste later in the week.

That’s the obvious reason as to why I appreciate salad bars so much! Everything is chopped! There are so many choices! I can put as much or as little of any ingredient on my salad! It’s exactly what I want, when I want it.

Today, I decided to go to my local King Soopers grocery store to stop by their salad bar. Now, this isn’t a typical salad bar, but it has a selection of Mediterranean salads and veggies. I nabbed some spring greens from the produce section ($.54!) and then filled my to go cup with lots of Med goodness. For my salad I chose: three types of olives, artichoke hearts, roasted red pepper, baby mozzarella, wheat berry salad, and tabbouleh. Fantastic!

Doesn’t that make you want to dive in??? I love the different textures that all of the toppings provide. The red pepper went so well with all of the other items, hurray! Definitely a wonderful lunchtime feast.

Coming from New York I am often disappointed by pizza just about anywhere else.

I love the thin crust and the perfect cheese to sauce ratio of New York style. No other pizzas compare.

Every once in a while though a good pizza will come along and dazzle my taste buds.

Getting a Little Greener March 11, 2011

Another beautiful day in the neighborhood! I really just cannot get over how beautiful Boulder is in the sun.

Moods are lifted, after school programming can go outdoors, my plants begin to sprout! All is right in my world.

Can you believe that they GREW that much in just one day! They’re doing so well!

For dinner, I decided to keep going with my green theme. That meant more pesto!!!

The Recipe:

  • 1 cup cooked rotini
  • 1 tbsp pesto
  • 7 cooked shrimp
  • 1/4 cup quartered artichoke hearts
  • 2 tsp sliced olives
  • 2 tsp mushrooms

Cook the noodles and shrimp so they are done at about the same time. Mix in the pesto. Add the rest of the ingredients. Simple as that.

I have become mildly obsessed with pesto and shrimp. I really love the combination… then add in some artichokes and it’s over the top good! Perfect quick meal that takes 10 minutes. Definitely good in my book!

Tonight was a pizza night. A delicious, delicious pizza night.

I can’t tell you how happy my pizza made me. My mouth starts watering just thinking about it… and I just finished!

Think about it, pesto, artichokes, mushrooms, olives, feta and just enough mozzarella to tie it all together. Can there possibly be a better combination? I really think not!

Artichokes are one of my very favorite foods. I love the sweet taste they leave in your mouth even after you have finished. What a lovely reminder that you have had a delectable vegetable. Mmmm, I really just want to finish off the rest of the artichoke hearts!

And now, I’m off to the Y for some exercise. Delightful way to end the day!
