Good Friends, Good Grub, Good Times April 16, 2011

Weekends were made for fun. Sometimes with my job weekends are also for work. This is made tolerable because I get to work with an amazing co-worker, Ruth, who enjoys sharing a laugh… and going out for frozen yogurt.

For our tough job today, we took a group of girls to the movie Rio. We both really want to go to Brazil now. Really, it was an adorable movie. Who doesn’t like a movie with singing birds?

We spent part of our afternoon hiking up Chattaqua with minimal huffing and puffing involved. Made sure to have enough time to visit Boulder Chill for frozen yogurt. Then went off to the school for a football camp for the kiddos with some of the players from the CSU football team. All in all a great afternoon.

What made it even better? Ruth and Lindsay came over for some good summertime springtime grilled foods. Grilled chicken and potato wedges with corn on the cob, salad and bread. It was definitely a good night for my taste buds!

That is a delightfully massive pile of food! Chicken: 3pts, Bread: 2pts, Potato: 2pts, Corn: 2pts, : Salad with chickpeas and cheese: 2pts. A whole giant dinner for 11pts! That’s what I’m talking about.

There is nothing better than sharing good food with great friends! We added in a round of Dicecapades just to top off the evening. Perfection.

Do You Fondue? I Can Too! March 15, 2011

How much more delicious can you get than melty cheese?  Just to make it even better, you get to put items of your choice into the delicious cheese. To put to goodness over the edge… you get to stab the items with fun little forks!

I chose a cheddar fondue tonight. Definitely a recipe I will repeat… although this is definitely an every once in a great while type of meal.

In the Mix:

-1tsp dry mustard (I use Coleman’s Mustard… it’s a little spicy so gives a nice zip)

-3 tbsp vegetable oil spread (it calls for buttah, but the substitute didn’t seem to change much)

– 3 tbsp flour

-freshly ground pepper to taste (I like quite a bit)

-1 cup milk (skim milk for me, again no problem)

-2 cups shredded sharp cheddar cheese

Melt the VOS in a saucepan over medium heat. Add in the flour, mustard, and pepper; cook for 1 minute. Remove from heat. Slowly stir in the milk… I add in a little bit at a time, stir, add a little more, stir, etc. This prevents any lumps from forming. And let’s be real, who likes lumpy fondue??? Return the mixture to heat and cook, stirring, until it boils. Add the cheese and stir until it is melted. Put it into a fondue pot and serve with your choice of dipping items. On my plate tonight was bread cubes, broccoli, and apple slices. Delicious!

I definitely needed to find the sterno lighter that is supposed to be at the bottom of the fondue pot. We tried to substitute it with a candle, but the heat is nowhere near as warm as it was supposed to be. This caused the cheese to solidify a bit, but all in all fondue is a fabulous meal!

I love me a good mushroom. In particular… portobello.

So chewy, so beefy, so ready to be turned into a juicy sandwich.

As I’ve said, my sandwich press and I are good lunchtime friends. She can whip a sandwich into shape in one fell swoop. Turning it from blasé to beautiful.

In the Mix:

  • One portobello mushroom sautéed with garlic and olive oil
  • Focaccia bread
  • Baby spinach
  • provolone Cheese

Oooooh boy, melty cheese, juicy ‘shroom, crunchy bread. I can’t tell you how delicious this sammie was.
