Don’t Get in a Flap April 21, 2012

After a long hiatus, Chris and I decided it was time to crack the wings book open again. This time, it fell open to citrus wings with a rum glaze. Pretty fantastic, and certainly summery for this unseasonably warm weather we have been having!

A little spice from a jalapeno, lots of fresh citrus flavor from lemon and lime juice, a little punch from the rum, and some nice sweetness from molasses in the glaze. There were definitely a lot of flavors going on, but they came together nicely.

A healthy side of green beans… and by side I mean half a plate! Done just they way I like them, ie. a little crunchy. What could be better for a fine spring day?

Tonight was a belated wing night. So to make up for the lateness, we decided to make two different types of wings! Both were wildly different, and both delicious.

For the first, we made Paprika Wings. A nice and smoky spice rub with paprika, cayenne pepper, and brown sugar. A great choice if you like a sweet and spicy combination. This wasn’t Chris’ favorite, but I really enjoyed them… especially in combination with our other choice of wings.

For our second recipe, we made “Super Simple Fan Feeders”. Sweet and sour, a little sticky, nice and crunchy. These wings marinated in lemon juice, soy sauce, sugar, garlic powder and onion powder. They were supposed to be grilled, which I do think would have added quite a bit to the wing flavor. We cooked them on a roasting pan, which did give them a nice, crunchy texture.

These two were great together. The dry rub wing juxtaposed nicely with the sticky sweetness of the other. Add a few crunchy veggies on the side, and you have a very tasty meal!

It’s Tuesday!!! That means wing night!

Tonight’s flavor of choice was Zesty Ranch Wings. Definitely a fantastic choice, if you ask me.

The Recipe:

  • 12 chicken wings
  • 6 tbsp olive oil
  • 2 tbsp ranch dip mix
  • 1 tsp paprika
  • 2 tsp chili powder

The Instructions:

  1. Preheat the oven to 400*.
  2. Mix olive oil, ranch mix, paprika, and chili powder together in a medium sized bowl.
  3. Coat the wings in the spice mixture. Let sit for 20 minutes.
  4. Bake the wings for 30 minutes, until they are crispy.

 

These turned out so well! I don’t usually love baked wings, but this recipe made them nice and crispy. I probably could have used a little more of the dip mix, and a bit more chili powder. It could have used a bit more of a kick. All in all, these wings are on the “to make again” list!

I married a man who loves chicken wings. Happily, I too greatly enjoy them. In fact, Chris often names my love of wings as one of the reasons he married me! One of my more brilliant Christmas presents to my husband was a book of wing recipes and two sauces.

Tonight we decided to instate Tuesday as a wing night.  We tried out the Wing Time buffalo wing sauce from Steamboat Spring, CO. Definitely had a lot of kick. Habanero as the main spice, and what not. I opted for tenders instead of wings this time, and they definitely hit the spot!

I added carrots with ginger and honey to make it a totally orange meal… and to have something that could help cut the spice! I think that this will be a fun way for us to set aside a cooking night, so we’ll have to find our favorite wing recipe!
