Good Friends, Good Grub, Good Times April 16, 2011

Weekends were made for fun. Sometimes with my job weekends are also for work. This is made tolerable because I get to work with an amazing co-worker, Ruth, who enjoys sharing a laugh… and going out for frozen yogurt.

For our tough job today, we took a group of girls to the movie Rio. We both really want to go to Brazil now. Really, it was an adorable movie. Who doesn’t like a movie with singing birds?

We spent part of our afternoon hiking up Chattaqua with minimal huffing and puffing involved. Made sure to have enough time to visit Boulder Chill for frozen yogurt. Then went off to the school for a football camp for the kiddos with some of the players from the CSU football team. All in all a great afternoon.

What made it even better? Ruth and Lindsay came over for some good summertime springtime grilled foods. Grilled chicken and potato wedges with corn on the cob, salad and bread. It was definitely a good night for my taste buds!

That is a delightfully massive pile of food! Chicken: 3pts, Bread: 2pts, Potato: 2pts, Corn: 2pts, : Salad with chickpeas and cheese: 2pts. A whole giant dinner for 11pts! That’s what I’m talking about.

There is nothing better than sharing good food with great friends! We added in a round of Dicecapades just to top off the evening. Perfection.

Dances with Soup: The Remix March 2, 2011

Last night I was having a hankering for veggies… and lots of them.

The remedy: attempt numero dos on the Three Sisters Soup. I would call it a great success!

I exchanged kale for the swisse chard, added in a bit more paprika and cumin, and decided to leave out the dumplings. I think that the dumplings added a little sumthin’ sumthin’ (perhaps a little too much) but I think next time there will be a dumpling revival.

 

As an added plus… it lasts for days! I have lunch for the next week. You have to love any meal that helps you do that!

Dances with Soup February 17, 2011

Tonight was a dinner and a movie night with my good friend, Lindsay, who is also in AmeriCorps in Boulder this year. In her incredible brilliance, she decided to go for a themed night… Dances with Wolves and Three Sisters Soup. Yay for Native American nights!

We started off my chopping a lot of veggies. Peppers, onions, garlic. Measured out cups of kidney beans, lima beans and kernels of corn. A dash of thyme, a pinch of cumin, some salt and pepper, two bay leaves and six cups of vegetable broth later our soup was bubbling away.

Onwards to the dumplings: corn meal, whole wheat flour, eggs, milk, canola oil, salt and pepper. Making a rounded tablespoon apparently is not my forte. I am more prone to making a quadruple scoop rather than simply rounded. All that was left was to drop them in the broth, and then let them simmer for a bit.

In AmeriCorps, we may not be wealthy, we may not have a lot of free time, but when we make soup… it. is. EPIC.

Our dinner for two could have fed a small, nay, medium army.

The Lindsay/Heather attempt wasn’t as pretty. The dumplings had melded together in a raft on the surface of the soup.  The soup itself burbled and bubbled like a mudpot in Yellowstone. Impressive sounds coming from a stock pot, to be sure.

It might not have looked pretty, but it sure tasted it!

A quick addition of swiss chard and cilantro gave our soup a healthy, green glow. It certainly went with our movie choice well.  The soup left me dancing… even when I had to leave Lindsay’s at intermission. The second half will have to be viewed at a later date!
