In Need of a Little Green July 18, 2011

As we are approaching the end of my second year of AmeriCorps service, stress levels are a little more elevated that usual. I am not one who likes goodbyes. I don’t love change. Obviously, this is strange coming from someone who has lived in five different cities in the last five years.  This year, it’s almost worse. I won’t be the one moving, so I’ll stay in one place while everyone else moves around me. Oh well, I’m sure everything will turn out well in the end.

In order to combat the stress levels, I decided on a salad. There is something about salad that calms me down. It must be all the vitamins!

Although it might not look it, this, quite possibly, might be the most delicious salad ever! It combines so many wonderful elements: carrots, cucumbers, radishes, kalamata olives, avocados, black beans couscous and chicken.

I love having lots of veggies in a salad, but the warm couscous put it to a whole new level! Definitely a wonderful addition to any salad, and most welcome on my plate. The best part is being able to use up leftovers… definitely a must in my house!

AmeriCorps Conference ’11 February 21, 2011

Over the last few days, I’ve been partaking in a giant conference for the Notre Dame Mission Volunteers AmeriCorps, of which I am a member. Decidedly good fun, 300+ volunteers from across the United States get together in the middle of their service year to hear about what is happening at different sites.

Of course, Boulder is the best, but other sites that are well represented are Apopka, FL, New Orleans, San Francisco, Chicago, Baltimore, Washington DC, Seattle, Phoenix, Wilmington, DE and a bunch of others. It is great to hear about the different people we serve, the stories people have to share and the workshops that help with training for our sites. It is definitely a great experience, and makes for a nice break in the middle of the year.

This year, I’ve found that the key-note speakers are interesting. They have an overarching theme to their speeches and have engaging topics. Meeting people from a variety of sites has led to several though provoking conversations. We are a group of passionate, involved and engaged people with incredible talents and so much to offer.

My favorite part has definitely been the story telling sessions from each site. For our group, we Boulderites did a telenovella/glee style skit full of tacky accents, overacting and rocking dance routine. Not to toot our group’s horn, but we did get a standing ovation. So well worth all the practice!

Since this is a food blog, I suppose I should try to comment on… the food.  Sadly, there is not much to report. The hotel is very nice, and everything is much nicer than last year, but when it comes to the food there is always a little something that’s lacking. For breakfast the offer a buffet. We have had egg and cheese on croissant/biscuit, but I am here to tell you that three containers with the same food does not a buffet make. For lunch we had a salad, but it wasn’t quite big enough and didn’t have enough variety to be satisfying. The dinner was lasagna, but it needed a little something more to make it a good meal. Perhaps a few more veggies, a little bread, and something a little chocolatey for dessert. I appreciate that they cook vegetables properly, but I am constantly unsatisfied with the food throughout the day. Weight Watchers would disapprove! Really, it just means that I am all the more excited to have good, home cooked meals from my mom on Wednesday!

I love me a good mushroom. In particular… portobello.

So chewy, so beefy, so ready to be turned into a juicy sandwich.

As I’ve said, my sandwich press and I are good lunchtime friends. She can whip a sandwich into shape in one fell swoop. Turning it from blasé to beautiful.

In the Mix:

  • One portobello mushroom sautéed with garlic and olive oil
  • Focaccia bread
  • Baby spinach
  • provolone Cheese

Oooooh boy, melty cheese, juicy ‘shroom, crunchy bread. I can’t tell you how delicious this sammie was.

Hitting the Slopes February 8, 2011

Nothing says Colorado like spending a weekend skiing. My husband’s family is spending the week in Breckenridge skiing the nearby resorts and invited us to come along.

We left Boulder in a SNOW STORM. It took 4 hours to get up to the condo! Once we got to Breck, it was all worth it. The town is adorable… definitely a skiing village. The snow was falling, the cozy lights were glowing from storefronts, it really was an idyllic evening.  We headed to Fiesta Jalisco for dinner. Two fish tacos later, and I was a happy lady!

The next morning, we prepared ourselves for a chilly day of skiing at Keystone!

It was definitely cold, but the views were incredible when the sun came out. In the morning, I made it down one run. It took an hour. Not the best time in the world, but there was only one fall involved, so I’m calling it a success.

Lunch was a well deserved combination of roast beef sandwich, french fries, carrots, clementines, and a bite of Toblerone. Delish and definitely the best tasting meal I’ve ever had. Must be something about the altitude and hard work!

I can now officially say that I have made it down a blue… the Wild Irishman. Mind you, I may have been swearing a blue streak the entire way down the mountain.

All in all, an amazing day on the slopes!

Chugging the Green Monster February 8, 2011

Saturday was my weigh in… and I am now officially 5% lighter than one month ago!!!! Hurray, and now onto 10%. Weight Watchers suggests making smaller goals to keep you motivated to continue on towards your major goal. It definitely is a great feeling actually losing weight and making goals along the way.

To celebrate my success, I decided to make a smoothie. Now, this was not my greatest attempts. I am perfectly willing to admit this. Next time, I would make sure to add more liquids because this one was a little ‘tik and zesty!

The Green Monster:

 

  • 2 Large handfuls of spinach
  • 1 Mango
  • 1 Banana
  • 1 Tbsp Almond Butter
  • 1 small container of Blueberry Yogurt

Blend everything together until smooth.

Next time, I would add in less almond butter and a splash or two of milk. This smoothie was so thick that I had to chew it!
