We have had a very productive weekend. Yesterday, Jolly and I had a baking party! Unfortunately I forgot my camera, but I assure you, there were lots of delicious treats. Jolly ended up making peanut butter oreo cheesecakes. They were definitely decadent treats! I made pumpkin spice cookies, which were cakey and moist… delish!

Ingredients:

  • 1 1/3 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 3/4 cup canned pumpkin puree (plain)
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/4 cup canola oil
  • 1/4 cup dark molasses
  • 1 cup golden raisins

Directions:

  1. Preheat oven to 350*.
  2. Mix flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, and nutmeg in a large bowl.
  3. Mix pumpkin, brown sugar, eggs, oil, and molasses in a separate bowl until combined.
  4. Stir the wet ingredients and raisins into the dry ingredients, making sure that none of the dry ingredients remain.
  5. Drop tablespoons of batter onto a cookie sheet 1.5 inches apart.
  6. Bake the cookies until they are firm to the touch and lightly golden on the top, about 10-12 minutes. Place them on a wire rack and let cool.

I’m going to bring these to work tomorrow, and I bet they’ll go fast!

After a long day of cleaning, shredding, and vacuuming, Chris and I decided to cook up the filet mignons that my grandmother sent to us. Let me tell you, we were excited to see these lovelies in the mail!

Chris put a little bit of Worcestershire sauce and stir fry sauce  on the filet, and grilled them to perfection. Really, he can cook a mean steak.

Add a dollop of cheddar mashed potatoes and a side of green beans, and you’ve got yourself a dinner!

It’s Monday. Work had a few too many lulls for my liking, so I had plenty of time to think about dinner. I wanted something light and delicious, so decided on chicken piccata… always a good choice!

This meal combines everything that I love. Broccoli, mashed potatoes, lemon, capers and artichokes… especially the artichokes.

It’s an easy enough meal to make. Just needs a little preparation.

For the piccata for two:

  • 1 chicken breast halved
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 3/4 cup chicken stock
  • 1/2 cup white wine
  • juice of one lemon
  • 1 can quartered artichokes
  • 2 tsp capers

1. Dust the chicken with flour until evenly coated.  2. Cook the chicken in the olive oil until done. 3. Once the chicken is cooked, add in the stock, wine, lemon juice, capers and artichokes. 4. Let simmer for 15 minutes. 5. Enjoy!!!

 

Grilling Goodness August 25, 2011

It has been hot recently… really hot. The kind of heat that makes you want to throw your oven away and only eat foods that don’t need to touch a pan.

In cases like these, there is really only one option: GRILL!

Chris was in the mood for ribs, so that was the direction we went tonight. I will confess that my plan to not use the oven or stove did not work at all. I baked the ribs for 1.5 hours covered in a Dinosaur BBQ dry rub. Chris made mashed potatoes and green beans- also using the stove.

Chris covered the ribs in the Dinosaur BBQ Honey Garlic sauce before putting them on the grill. Now, I’m usually a fan of their Sensuous Slather, but the garlic and honey sure hit the spot last night!

It’s Not Easy Being Green June 4, 2011

Goodness, today has been fantastic. Going to the zoo and good food… I am a lucky girl!

When we got home, Chris decided that it was a grilling type of night. It was definitely the perfect summer weather for it.  Originally we were going to try slow cooking ribs, but upon perusing the selection at the grocery store, Chris opted for a steak option instead. I definitely can’t complain as it turned out to be absolutely delicious.

The steak had paprika, coriander, turmeric, cayenne, brown sugar, garlic and onion powers on it as a dry rub. Chris made chimichurri sauce for dipping (the green stuff in the ramekin in the picture), mashed potatoes and then I grilled up some asparagus, zucchini and summer squash.

I’m pretty sure the dinner encapsulates summer on a plate. Perfect, if you ask me!

Roasts are the Most(s) April 7, 2011

Roasts are fun. I really enjoy preparing a chicken, popping it in the oven and then smelling it for the rest of the afternoon. Sadly, when both the hubby and I have been at work all day, having to wait for a roast is just not practical.

Insert: the grocery store.

The convenience, the proximity, how can it be beaten? Our local grocery store can provide us with a rotisserie chicken with only a  five minutes wait. Excellent.

Tonight, our table was graced by the presence of a garlic herb rotisserie chicken, mashed potatoes and zucchini. Delicious.

An excellent meal all around. Besides, I will confess, a major reason that I like rotisserie chicken is the leftovers. I can make soup, or stock, or tacos, or quesadillas, or salad or a plethora of other choices. That in my book is the mark of a good dinner!
