A Crispness to the Air September 14, 2011

It’s beginning to feel a lot like fall! A set of cool, wet, fall like days have set into Boulder. Today we even had misty Flatirons and rain!

This kind of weather means that warm, cosy food is definitely in order. I’ve been having several cups of tea at work… a must when you work at the bottom of the school with no windows. By the time I got home, there was not a question in my mind about the kind of meal that was in order. Chris had mentioned Cornish Pasties the other day, and we both felt it was the perfect night for them!

Pastie Filling:

  • 1/2 pound ground beef (we use grass fed)
  • 2 medium white potatoes
  • 1/2 medium onion
  • 1/2 cup chopped carrots
  • 1/2 cup peas
  • 1/2 cup beef gravy

For the Crust:

  • We used a pre-made crust, but you could definitely make your own!

Instructions:

  1. Peel, and chop the white potatoes. Cook them until they just begin to soften.
  2. Sautee the chopped onion until soft. Add in the ground beef and cook until done.
  3. Combine the potatoes, carrots and peas with the beef mixture.
  4. Preheat the oven to 450*
  5. Cut one of the pie crusts into two pieces. Roll them out into 8 inch diameter circles.
  6. Scoop about 1/2 cup of the beef mixture onto the lower half of the pie crusts.
  7. Fold the pie crusts in half, making a pocket. Make sure that the edges are pinched closed.
  8. Brush the crust with an egg wash.
  9. Bake the pasties for 12 minutes, or until golden brown.
  10. Let the pastie cool a bit before eating, and enjoy!

They were an absolutely delicious, hearty fall meal. Perfect to enjoy beside a fire!

The trolls thought that it was a good place to cosy up as well. They are so happy that it’s finally fall!

…Ribs!!!!

Clearly, Colorado is coming into the summer season. Somehow, we managed to skip over the lovely warm springtime weather I was looking forward to  and leap onward towards the hot heat of summer. This does of course come with some benefits… grilling.

Chris has not been one to be stopped by cooler weather and winds when it comes to his grill, but the nice weather certainly makes it more desirable.

We puttered around Pearl Street in the afternoon and managed to stop in at Peppercorn. I am convinced that the store has a magnet pull on us. Every kitchen utensil you could possibly ever want and then some are to be found within its walls. As an added bonus, they have some specialty food that you can’t find in many other places. Things like Vegemite, Farrow’s English toffees, Lebkuchen  and for tonight dinner (most importantly) they have Dinosaur Barbecue Sauce!!! Imported all the way from Syracuse, NY… clearly one of the nations’ hotbeds for bbq.

I don’t always love barbecue, but Dinosaur’s has something that makes everything it touches taste exponentially better! Like tonight’s dinner of ribs. They would be fine with any sauce, but absolutely delectable with the touch of the Dinosaur!

As an aside, we tried pre-dryrubbed ribs today. I’m not sure that I would advise this. Definitely salty, and I don’t think the spices added much in the way of delicious flavor. But other than that, they were good. Fall off the bone good. Just the way they’re supposed to be!

Good Friends, Good Grub, Good Times April 16, 2011

Weekends were made for fun. Sometimes with my job weekends are also for work. This is made tolerable because I get to work with an amazing co-worker, Ruth, who enjoys sharing a laugh… and going out for frozen yogurt.

For our tough job today, we took a group of girls to the movie Rio. We both really want to go to Brazil now. Really, it was an adorable movie. Who doesn’t like a movie with singing birds?

We spent part of our afternoon hiking up Chattaqua with minimal huffing and puffing involved. Made sure to have enough time to visit Boulder Chill for frozen yogurt. Then went off to the school for a football camp for the kiddos with some of the players from the CSU football team. All in all a great afternoon.

What made it even better? Ruth and Lindsay came over for some good summertime springtime grilled foods. Grilled chicken and potato wedges with corn on the cob, salad and bread. It was definitely a good night for my taste buds!

That is a delightfully massive pile of food! Chicken: 3pts, Bread: 2pts, Potato: 2pts, Corn: 2pts, : Salad with chickpeas and cheese: 2pts. A whole giant dinner for 11pts! That’s what I’m talking about.

There is nothing better than sharing good food with great friends! We added in a round of Dicecapades just to top off the evening. Perfection.

HAPPY ST. PATRICK’S DAY!!!

In honour of such a festive occasion we had corned beef and cabbage… one of my favorite meals!


It turned out perfectly! Last year’s attempt in Baltimore was less than perfect. For some reason, the corned beef was not very flavorful, not very tender and generally not as tasty as one would have liked.

This year we got a flat cut… I don’t know if this makes any difference, but man oh man it was delectable. So juicy and tender, it was just falling apart when we took it out of the crock pot. The flavor was sublime! I really had to make sure that I stopped when I was full. Mmmm, I love me some corned beef!

Since this was a nice occasion, I also got some daffodils. Can’t wait until they are all blooming!

Aren’t they beautiful??? I just love daffodils… they mean that spring is around the corner!
