I’m Getting Better! April 25, 2011

It has now been over a week of coughing, wheezing, sniffling and the like. This was not amusing at the beginning, and I am certainly not amused by this illness now. All I want is for my lungs to be in working order. Is that too much to ask???

On the plus side, after my week of ickyness, I finally have gotten to the point where I want to eat more than soup!

I decided to go for a reprise of my Mexican pizza.

Easy, fast, my kind of recipe. Saute a pepper. Add in black beans. Add in salsa of your choice… I picked a medium red salsa for tonight. Put on a tostada and sprinkle with cheese. The perfect simple dinner!

Indeed, it was a party in my mouth tonight! Taco soup is just about the easiest thing that you can make. There are lots of opportunities for variety and adapting it to what you have on hand. These are qualities that make a recipe go from good to fantastic in my mind.

I give you: Taco Soup!

The Recipe:

1 cup salsa (This can be red or green, chunky or smooth… the beginning of endless possibilities)

2 cups chicken stock

1/4 cup shredded chicken (I used leftover cubed chicken tonight)

Crushed tortilla chips and cheddar cheese to garnish

Heat until steaming. Really, it is just that easy! Tonight I wanted to add in some of the cauliflower and broccoli that I had leftover, so I did. If I have an onion, I chop it into small pieces and sautee it in the pot before the rest of the ingredients enter the mix. If you like it spicy, you can add in more peppers. Really the possibilities are endless!

After dinner, Chris managed to fix the kitchen sink.  It was one of those jobs where originally he wanted to fix the leaky faucet, which then turned into replacing and ancient, corroding fixture. Gotta love it when small projects become HUGE!

Tonight was Fiesta Night, and believe me, I really know how to have a fiesta in my mouth! I used the Weight Watchers recipe for Spicy Beef Tacos. After a few minor changes, I think that we have a winner.

A few spritzes of cooking oil in a frying pan. Two minced garlic cloves and a jalapeno into the pan. Sautee until tender ~1 minute. Add in 3/4 pound ground beef. I used grass-fed beef for this. Cook until the beef is browned. Add in one can of diced tomatoes, 1 1/2 tsp ground cumin, 1 1/2 tsp coriander, and 3/4 tsp salt. Cook this until most of the liquid has been evaporated/absorbed.  [WW’s suggests that you use corn tortillas that you bake until almost crisp, but not so crisp that you can’t fold them.] Warm two small whole wheat flour tortillas. Top with your choice of veggies, cheese and salsa. Enjoy!

 

That green monster in the back ground is what both of my tacos looked like eventually. I would definitely make these again. So savory, so spicy, so satisfying!
