Meat in the Mail August 14, 2011

As I said, Chris and I celebrated our third wedding anniversary recently…as in August 1st! Just before we left for our weekend getaway, we found a package on our doorstep. In this glorious package, we found filet mignon, pork chops, chicken breasts, kitchen knives and a cutting board. My grandmother sent us a wonderful present from Omaha Steaks that we are going to enjoy most thoroughly!

For our first attempt at cooking our meat in the mail was a fantastic success. In typical fashion, Chris deftly grilled the steaks to perfection. I added in broccoli and roasted potatoes. It was certainly a delicious meal altogether.

Chris put a dry rub on the steak. It included coriander, paprika, garlic powder, onion powder, cayenne pepper, turmeric, brown sugar, salt and pepper. It came out so well! For the potatoes, I boiled them first to cut down on the roasting time. After they came out of the water, I added paprika, a bit of salt and olive oil then baked them for 20 minutes. I always love it when foods are ready at the same time!

Just the way we both like our steaks. Absolutely delicious!

This. was. a. long. week. I think it takes a while to get back into the swing of things when it comes to working with kiddos. Elementary students have so much energy! The first week of summer school was filled with math practice and literacy groups. Trips to Colorado University for a campus tour and bowling. Today a basketball tourney with all of the I Have a Dream Classes. Lots of fun, but we see the kids for four hours longer than during the school year! Really takes it out of you by Friday.

Tonight, I wanted a quick, easy dinner. This meant utilizing the leftovers.

Tacos are always good in my book. Especially when it’s warm out, the day has been long, and you want something with fresh flavors. Grilled steak, cilantro, lime, tortilla. Bam!

That’s what I’m tawkin’ about.

It’s Not Easy Being Green June 4, 2011

Goodness, today has been fantastic. Going to the zoo and good food… I am a lucky girl!

When we got home, Chris decided that it was a grilling type of night. It was definitely the perfect summer weather for it.  Originally we were going to try slow cooking ribs, but upon perusing the selection at the grocery store, Chris opted for a steak option instead. I definitely can’t complain as it turned out to be absolutely delicious.

The steak had paprika, coriander, turmeric, cayenne, brown sugar, garlic and onion powers on it as a dry rub. Chris made chimichurri sauce for dipping (the green stuff in the ramekin in the picture), mashed potatoes and then I grilled up some asparagus, zucchini and summer squash.

I’m pretty sure the dinner encapsulates summer on a plate. Perfect, if you ask me!

Indeed, beef- it’s what for dinner. This was particularly good timing as I had just sat through ‘Healthy Learning Paths’ with my third graders finding out the difference between healthy and unhealthy fats. What was number one on the unhealthy list? You guessed it… beef.

Now all I can think of it my arteries being filled with saturated fats. The woman who was running the program this morning demonstrated saturated fats by syringing Crisco into a straw. Delightful image indeed.

I tried to counteract the sat. fats by piling copious amounts of zucchini and radish on my plate. I must say though, the raspberry pomegranate marinade on the steak was delicious!

Now I’m off to the Y for some solid exercise.
