HAPPY HOBBIT DAY!!!

For those of you who don’t know, today marks the 75th anniversary of The Hobbit. Thank you to J.R.R. Tolkien for bringing us the whimsey of the hobbits and magic of middle earth. Today’s celebrations were marked with second breakfast held at 11:00 am around the world. I joined in most heartily, enjoying a second breakfast of cheese on toast and a cuppa.

Certainly hit the spot on this cool fall morning!

I shall leave you, dear friends, with an image of my true self.  For I am a hobbit at heart. A lover of good food, laughter, and friendship.

Be sure to do something hobbity today. Have a simple meal filled with local foods.  Visit your gardens.  Maybe even enjoy a pint (it comes in pints?!) of ale.

Scotland in my Soul January 28, 2012

Today was a delightfully quiet, cozy kind of a day. The sky was grey, and for those of you not living in Colorado, please understand this is a rarity. Don’t get me wrong, I enjoy the sun, it makes playing outside easy when you know you can count on the weather. Sometimes, my soul craves grey days. It must be the east-coaster in me.

So today was one of those days that revives me. A little overcast. A little grey. Mostly perfect. On these kind of days all I want to do is read, sip some tea, and dream of Scotland.

For those of you who don’t know, I spent my junior year in college in Edinburgh, Scotland. Certainly some of my favorite memories took place there. Chris proposed while I lived there, my family visited for Christmas which involved fire-light parades, I made some wonderful friends who enjoyed a good frolic through moors, on top of hills, in glens and in the sea. I have come to the realization that I left a little bit of my soul there. On grey days, I close my eyes, imagine the salty sea air brushing against my face, hair whipping in the wind and Scotland running through my veins.

As a poor substitute for being in my dream-land, I made one of my favorite meals: Tuna fish on a baked potato.

In Edinburgh, there were lots of bake potato shops, where you could get a myriad of toppings on a steaming hot baked potato. I loved being able to get an extremely filling meal, that wasn’t deep fried, for relatively little money. The tuna salad topping was my favorite. Absolutely delish.

To complement my meal, I simply had to add a side of black tea with a splash of milk. And of course, a Tunnock’s Tea Cake for desert.

If you have never had a tea cake, I would advise you to go and find one now. It’s a bit like a s’more. Marshmallow filling on a biscuit covered in chocolate. Besides, it’s like unwrapping a present every time you eat one… and who doesn’t like getting presents??

For now, tuna baked potato with tea and cakes will have to do to satisfy my urge to go to Scotland. Just for now.

Mile High and Feeling Fine March 25, 2011

Chris and I have a goal of visiting all the state capitol buildings. Today, we knocked off another with my family- Denver!

I started off the day with a breakfast of yogurt, pineapple, strawberries and tea. Definitely a nice, fresh way to start a day.

We headed out quickly after breakfast to beat the crowds at rush hour. Mum had booked us a tour of the capitol dome, so we had to be there bright and early… before the school groups!

In the end, we got there a bit early, but that was nice because we got to putter around a bit before the tour. It really is a beautiful building. The steps are marked at one mile above sea level… three times to get it right. The dome was originally covered in copper, but this annoyed the gold miners who pointed out there are no copper mines in Colorado. So, they banded together to donate enough gold to cover the entire dome!

It is incredibly ornate inside as well. The walls are covered with rose onyx, the floors with marble… all from Colorado. Most of the fixtures are the original brass, and it takes three people polishing them daily to keep everything shiny.

Just a little proof to show that we made it! We’ve now covered Pennsylvania, Maryland, Delaware, Colorado and Washington, DC together. If ever you get the chance, definitely go to visit capitols. They each have a unique and interesting story.

Grilling Genius March 13, 2011

It’s official. Chris is a grilling genius.

Nay, he is a grilling guru! In all seriousness, I wanted some grilled chicken tonight and man, did he come through.

It was everything that you want in a piece of grilled meat… moist, juicy, spicy goodness with just the right amount of carcinogenic goodness that comes from being charred to perfection without being burn to a crisp. Mmm, making my mouth water just thinking about it!

Isn’t it just a work of art in drumstick form??? To complete the meal, I added potato knish and a mix of broccoli and cauliflower. My suggestion for the veg: sprinkle a little Old Bay seasoning and they start to sing.

In other news today:

My babies are sprouting! You grow little swiss chard! Reach for the sun baby bean sprout! I just love that they are making a solid effort just seven days after meeting the soil. Good job little ones!

Now that day light savings is kicking my behind (spring forward, grumble, grumble) I’m sitting down to enjoy a cuppa and a few pages in my gardening book before beddie byes!

 

Also, an update from Saturday… 2.6 (!!!!) pounds lost last week for a grand total of 15 lbs gone! Yay!!!!
